Pumpkin Apple Crisp
This recipe is as customizable as it is easy to prepare. Swap in dried blueberries or cherries, use your favorite thin crispy cookies for the topping...you're only limited by your imagination!
1 bag TJ's Pumpkin & Roasted Pepitas Cookies, crushed
1 jar TJ's Big & Chunky Apples
2 tablespoons TJ's Unsalted Butter, melted
1/2 cup TJ's Dried Cranberries, divided
1 container TJ's Organic European Style Yogurt
Your favorite TJ's Oil, Butter or Cooking Spray (to grease pan)
Preheat oven to 350°F. Grease an 8x8 baking pan. Add chunky apples and half of the cranberries to the greased pan, stirring gently to combine. Top mixture with crushed cookies and remaining cranberries, and drizzle with melted butter. Place pan in center rack of oven and bake for 30 minutes, or until apples are bubbling. Remove from oven and let cool 5 minutes. To serve, scoop yogurt into a small bowl and top with a generous spoonful of Pumpkin Apple Crisp. Enjoy!
