Grilled Nectarine Shortcake & Sriracha BBQ Glaze
Grilling the nectarines lends an element of smokiness to this classic, sweet summer dessert.
Cut nectarines into thick wedges (about 6-7 wedges per nectarine). Heat a cast-iron grill on the stovetop over medium heat and grease with 1 tablespoon of olive oil. Pour olive oil in a small bowl and dip nectarine wedges until fully immersed in oil. Place wedges on grill and sear until grill marks appear, about 2-3 minutes. Flip and repeat. Baste wedges with Sriracha BBQ Sauce on all sides then remove from grill and set aside.
Slice Shortcake Biscuits in half—careful, these biscuits are fragile! To serve, scoop ice cream onto the bottom half of the biscuit then top with grilled and glazed nectarine wedges. Add an extra drizzle of Sriracha BBQ Sauce for an extra zing! Keep sandwiches in freezer until ready to eat. Enjoy!
