Chocolate Maple Pecan Shortbread Bars

Preheat oven to 350°F. Grease an 8 x 8-inch baking pan with cooking oil spray; set aside.
Slice 1 stick of butter into 8 pieces; put back in fridge to chill, if necessary. Empty crust mix into the bowl of an electric mixer fitted with a paddle attachment, add chilled butter and beat on low speed until mixture becomes crumbly. Increase speed to medium and beat until dough comes together.
Turn dough out into greased baking pan and use your hands to press evenly into pan bottom and up sides. Bake on center rack of oven until edges begin to brown, about 18 to 20 minutes. Remove from oven and cool to room temperature, about 30 minutes.
Melt remaining 2 tablespoons butter. Empty contents of filling packet into a medium mixing bowl, whisk in egg, melted butter, and water; mix until combined. Pour filling evenly over crust and sprinkle with chocolate chips. Return pan to oven and bake until center of filling is set, 30 to 35 minutes. Cool to room temperature in the pan on a wire rack or stove top. Once cooled, cut into 16 bars and enjoy.
