Apricot Jubilees

Halve the apricots, remove seeds and place the hollow side facing skywards on a platter

In a small bowl, mix together the goat cheese and almonds

Using a knife, cut off the bottoms of the coconut macaroons

Place a generous dollop of the goat cheese mixture on each apricot half

Crown goat cheese mounds with the top portions of the macaroons

Dot the blueberries with a small amount of goat cheese, then gingerly place atop the point of each macaroon

Serve immediately, ideally with Trader Joe’s English Breakfast Tea
