Balsamic Lentil Sauté

Serves: 2 - 3 Prep Time: 10 Minutes Cooking Time: 20 - 25 Minutes



Add onions to a large skillet on medium heat then stir in olive oil and garlic. Add spinach and bell pepper and cook until spinach begins to wilt. Empty half the package of lentils into the mix and then add sundried tomatoes. Heat and stir another two minutes and then mix in the parsley and balsamic glaze. Divide brown rice onto individual plates and ladle sauté over each serving.
