Sesame Quinoa Salad
With its fresh flavors and varying textures, this salad is the perfect base for delicately grilled shrimp or fish.
Prepare the quinoa according to package directions. While quinoa cooks, add pineapple tidbits to a saute pan over medium heat. Cook 2-3 minutes, stirring occasionally. Turn heat to medium-high and add snap peas and green onions to pan. Add 2 tablespoons water and cover with lid to steam, about 2 minutes. When water has evaporated, remove pan from heat.
In a large bowl, add all ingredients, tossing gently to combine. Season to taste with salt & pepper, and add more dressing if desired. Serve warm, or chill for 1 hour and serve.
