Preheat oven to 350°F and line a large baking sheet with parchment paper; set aside. In a medium sized bowl, mix all ingredients. Spread additional sugar on a plate. Roll walnut sized pieces of cookie dough into balls, then roll in sugar and place on lined baking sheet. Using a fork, lightly press down on the dough balls to create a crisscross pattern. Place baking sheet on center rack of oven and bake for 11 minutes. Let cookies cool on baking sheet for 5 minutes before transferring to cooling rack. Makes 18 cookies.
