We're big fans of perseverance. We think that if you try hard enough and really work at something, there's no nut you can’t crack. Even if that nut is a coconut. We believe this because developing Trader Joe's Roasted Coconut Chips took enormous amounts of perseverance, and it was worth every bit of effort.
We love the flavor of coconut, and we love the crunch of chips. Most of the coconut chips we encountered, though, contained oil—sometimes lots of oil. We knew there had to be a better way. So we persevered. Eventually, we found a supplier in Thailand who had perfected a process that resulted in phenomenally flavorful, incredibly crispy little strips of coconut… with no added oils!
Our supplier uses two varieties of fresh, mature Thai coconuts. They're cut into strips and soaked in fresh coconut milk and coconut juice, then dry roasted with a bit of salt and a touch of sugar that enhances the natural sweetness for which Thai coconuts are famous.
