Pumpkin Butternut Squash Bisque

For a number of Pumpkin Seasons, we’ve carried a Pumpkin Soup in our grocery aisle. It’s still there again this year, ready to heat for lunch, or use as a base for all kinds of pumpkin-y dishes. This year, we’re also offering a twist on the concept: a fresh, small-batch, kettle-cooked version you’ll find in our refrigerated case.
Trader Joe’s Pumpkin Butternut Squash Bisque employs both pumpkin and butternut squash in its journey to become a smooth, creamy (without cream), delicate purée. Onions, carrots, and garlic sautéed in oil set the stage for the rich soup to come. Hand-chopped fresh sage joins the veggies and is given ample time to release its aromatics and develop its flavors. Finally, the pumpkin and butternut are added, cooked to just the right consistency, and puréed to a velvety texture. The finishing touch of browned butter adds a depth of flavor we just haven’t encountered in other refrigerated soups of this kind. The recipe is unique to Trader Joe’s, and since Pumpkin Season is short, so is the time during which you’ll find this delish Bisque.
