Our lame lyricism aside, we make no apologies for the dark emerald green leaves within each bag of Trader Joe’s Organic Mixed Baby Kale. Kale remains a darling of the power-foods movement, and we think Baby Kale amps up the power exponentially. Why? Because it’s so much easier to eat (think baby spinach vs. regular spinach), and still provides all the nutritional benefits of its more mature family member.
Organic Baby Kale has been bred to be more tender, even when fully ready for harvest. It doesn’t have the large center “rib” found in adult varieties of kale. When you eat it raw, it’s significantly easier to chew, and a bit milder than other kale, yet it’s still sturdy enough to stand up to a hot dressing. It cooks faster, too, because the leaves are lighter and, again, there’s no “rib.” As for nutrition… a single one-cup serving of Organic Mixed Baby Kale contains 170% of the Daily Value of both vitamin A and vitamin C.
