Fact: Very few commercially available pumpernickel breads are made predominantly with rye, because rye contains less gluten than other grains and makes dough much more difficult to work with.

Also fact: We pride ourselves on offering unique products that are difficult to find elsewhere, so we worked with our supplier to craft Trader Joe’s Dark Pumpernickel Tuscan Pane, a pumpernickel bread made with rye.

Since we like to honor tradition wherever we can (‘tis the season), our Pumpernickel Pane is made according to old world methods, utilizing a slow-rise process. Using a 100% rye starter, the dough is mixed, hand-shaped, allowed to rise, and then baked on a stone hearth for a crisp crust and chewy, toothsome interior. It makes a great base for a classic Reuben, an avocado and Havarti melt, or a hot, open-faced turkey or roast beef sandwich.
