While not actually from Mexicali, Mexico, this salad does evoke the flavors of that northern Mexico capital city (it lies very near the Mexico-U.S. border, and serves as the capital of the state of Baja California). The city of Mexicali has earned the nickname, “the city that captured the sun.” Trader José’s Mexicali Salad may not capture a ball of fire, but it will capture a burning appetite.
Mexicali Salad begins with a bed of crunchy Romaine lettuce and mixed greens, blended with red and green cabbage. Artfully arranged on top are chunks of chili lime seasoned chicken breast meat, corn, red & green bell peppers, sun-dried tomatoes (fire-roasted in some regions), Asiago cheese, and a sprinkling of cilantro. Pepitas (pumpkin seeds) are packed separately within each salad, so they stay crunchy. Each single-serving-sized Mexicali Salad comes with a container of jalapeño Caesar dressing – it’s nicely seasoned, with a little kick, but not spicy. You can eat this Salad directly out of its container, or toss it all together in a big bowl. If you want to evoke the city of Mexicali even more, take a Teeny Tiny Avocado and dice it into that big bowl. It’s the perfect partner to this crispy, crunchy Salad bursting with bold flavors.
