Heart of Palm Medallions

Hearts of palm are harvested from the inner core of certain palm trees, usually from the youngest portion of plant shoots. This typically yields smallish cylindrical segments that naturally break apart into concentric pieces when chopped. Trader Joe’s Heart of Palm Medallions are different. Ecuadorian farmers harvest plant shoots a little farther down the stem. These thicker shoots yield large, very firm (not tough), coin-shaped pieces that don’t break apart. And, they still have all the great flavor heart of palm fans love.
Their size makes these Medallions amenable to a cracker-like function. Top them with thin slices of cucumber, and a sprinkle of Chili Lime Seasoning. Try a small dollop of guacamole or a schmear of chèvre. Make them the heart of your vegetarian tacos. Of course, you can always feature them in a salad with your favorite leafy greens and veggies.
