Coffee Rubbed Spatchcocked Chicken
By now, you’ve probably noticed our penchant for spatchcocking chickens. We love a classic roasted whole chicken, but sometimes it’s good to mix things up. And what better time to try something new than the present, when Trader Joe’s Coffee Rubbed Spatchcocked Chicken is gracing our shelves.
This Chicken has been fully spatchcocked—or butterflied—for you. The butterflying allows the chicken to lie flat in a pan and cook more quickly than the average whole chicken. It’s also pre-seasoned specifically for our coffee extravaganza. The coffee treatment consists of a rub made with coffee grounds, salt, garlic, chili powder, cumin, and paprika. It’s finished off with some extra virgin olive oil, dried vinegar, and rosemary extract. All these ingredients perfectly prepare our newest Spatchcocked Chicken for cooking.
And the cooking of our Spatchcocked Chicken couldn’t be simpler! Simply place the chicken on a baking sheet or oven-safe dish and bake for 400°F for 60-75 minutes. Once out of the oven, the skin is crispy and the chicken is moist. Serve it with rice and veggies for a complete meal.
