Holy mackerel, Trader Joe’s!

With that out of the way, please welcome Trader Joe’s Smoked Peppered Mackerel Fillets to the refrigerated case at your neighborhood Trader Joe’s. These Omega-3-rich Fillets are fished from the icy cold Atlantic waters off of Scotland’s Shetland Islands, and after a quick journey to our supplier in Maine, they’re filleted and wet-brined in a mixture of water, salt, and cane sugar. After brining, the top of each Fillet is hand-rubbed with cracked black pepper. This is where the smoke and mirrors come in (well, smoke, anyway). The fish goes into a smokehouse, where it’s kippered (hot-smoked) at 140ºF over hardwood (oak and maple) and fruitwood (apple and cherry) from the Maine woods. When the Mackerel emerges from the smokehouse, it is packaged in a similar fashion as our smoked salmon offerings – the clear window shows off the fish’s slightly orange hue and an abundance of cracked black pepper.
