Roasted Cauliflower & Cheese Mezzelune
Italian for “half moons,” mezzelune could be described as a half circle or a large crescent. In common usage, it’s almost always used to refer to a shape of ravioli. With this in mind, the nomenclature is the only thing we’d consider common about Trader Giotto’s Roasted Cauliflower & Cheese Mezzelune.
These pillows of pasta are produced exclusively for us by an Italian pasta maker who’s been crafting stuffed pasta for more than 130 years. They know their stuff. One of the secrets to the success of this company’s filled pastas is the ratio of noodle to filling. They begin with very thin sheets of pasta, and use very generous amounts of filling; this combination results in big flavors with every bite. We’re big fans of their pasta, so when we were looking to add a cauliflower option, we sought them out for the job. Here they’ve blended roasted cauliflower with ricotta, mozzarella, Grana Padano, and Italian hard cheeses. This combination is creamy, nutty, rich, and earthy. It hardly needs a sauce. We like to dress these Mezzelune with a bit of olive oil and more grated cheese. If you want to add a sauce, our Organic Tomato Basil Marinara is always a good choice.
