Seems to us, those ancients were on to something. Since ancient times, celery has been used as medicine, as an herb, and as a nourishing food. Today, celery is a staple in American kitchens due to its mild flavors and versatility. A member of what Italian cooks call the holy trinity and French cooks call mirepoix (celery, carrot, onion), it can be used to flavor soups and stews. Celery also provides a crunchy addition to stuffing and crudité platters, and makes a great snack, with or without fillings in the center.
