Baked Beans in Tomato Sauce

The recipe used to make our Giant Baked Beans in Tomato sauce is based on a traditional Greek dish called gigandes plaki – of course, we’ve taken some recipe-torial liberties, as we are wont to do. Here, our supplier begins with cannellini beans grown in Northern Greece, soaking and boiling them until they’re plump, soft, and on the giant side (for beans…). Once cooked, they’re combined with a savory tomato sauce that’s rich in herbs like parsley and dill, and further seasoned with salt, black pepper, and crushed red pepper. This richly-flavored mixture is then baked, allowing the flavors to mingle and marry in the most merry manner. This concoction is a ready-made side dish you can heat in a jiffy and serve with fish or poultry. It’s also delicious at room temperature, as part of a mezze platter with feta cheese, Dolmas (stuffed grape leaves), and other Greek-inspired delights.
