Toscano Cheese with Cracked Black Pepper
When the history of cheese is written, somewhere within the tome will be the creation of the cheese we call Toscano. This cheese is a game-changer, even all these years (almost seven!) since we first encountered it. Its robust, nutty flavor brings aged Parmesan to mind immediately. And then, while you’re enjoying the nutty notes, in sneaks a subtle creaminess than can only be a farmstead Cheddar. Which is it? It’s neither. And it’s both. It’s a miracle of modern cheesemaking, and it’s changed the cheesescape for the better.
Over the years, we’ve offered Toscano in a number of iterations – some seasonal, some available every day. Currently highlighted in our cheese case is Trader Joe’s Toscano Cheese with Black Pepper, a special cheese that you don’t have to save for a special occasion. As it ages, each wheel of cheese is hand-rubbed with cracked black pepper, so every wedge features a burst of mildly spicy pepper flavor. Serve it on crackers, over pasta or shaved onto a grilled steak. It’s priced at $9.99 a pound, (random-weight wedges of about eight ounces will be somewhere in the vicinity of $5), so you can serve it often. You’ll find it in our cheese case.
Note: We suggest letting the cheese breathe at room temperature for about 30 minutes to maximize its flavor potential.
