Our Panettone supplier begins with fresh, creamy butter and a sourdough starter. They follow the customary method of production used in the Piedmont region, which involves a leavening process that’s twice as long as that used in the Veneto region – for you this means a softer end result, with more intense aroma and richer flavor. All good things. Their process is also differentiated by the use of egg yolks instead of whole eggs; the yolks contribute to that softer texture that our tasting panel found so appealing.
Traditional panettone is studded throughout with candied fruit. We sell astonishing amounts of this type of panettone every year. We love it. But now there’s chocolate involved.
