Fact: Very few commercially available pumpernickel breads are made predominantly with rye, because rye contains less gluten than other grains and makes dough much more difficult to work with. Also fact: We pride ourselves on offering unique products that are difficult to find elsewhere, so we’ve created Trader Joe’s Dark Pumpernickel Tuscan Pane, a pumpernickel bread made with rye.

Since we like to honor tradition wherever we can (‘tis the season), our Pumpernickel Pane is made according to old world methods, utilizing a slow-rise process. The 100% rye starter is mixed, hand-shaped, left to rise, and then baked on a stone hearth for a crisp crust and chewy, toothsome interior. It makes a great base for a classic Reuben, an avocado and Havarti melt, or a leftover-turkey-and-cranberry-sauce sandwich. Ingredients: Unbleached Enriched Flour (wheat flour, malted barley flour, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), water, whole grain rye meal, contains less 2% or less of Vital Wheat Gluten, Wheat Flour, Ascorbic Acid (for frehness), Enzymes, Sea Salt, Yeast, Caraway Seed, Cultured Wheat Flour (for freshness) Caramel Color, Organic Corn Meal.
