After harvest, those nuts are steam pasteurized - heated at low temperatures (210º-215ºF) for about eight seconds. This doesn't cook the almonds; rather, it exposes them to just enough heat to ensure safety. The almonds are then taken directly to a nearby facility, where fresh, raw almonds are turned into Raw Creamy Almond Butter. How does this miracle of transformation happen? It's so simple, so basic, and yet, magical. The almonds are shelled and the skins left on. The raw, skin-on almonds are then ground into a creamy butter.
