This is our Platinum label Aged Balsamic Vinegar of Modena (Aceto Balsamico di Modena), crafted exclusively for us in Modena, Italy. It's blended from high density and high acidity must of select grapes typical of the Emilia Romagna region, combined with wine vinegar and fermented in specially chosen wooden barrels, then aged in small wooden casks for a minimum of three years. This traditional vinegar-making process is carefully monitored by the balsamic consortium, which strictly regulates every detail-from grape varietals, growing regions and how the grapes are grown, to aging methods and bottling standards. Trader Giotto's Platinum Aceto Balsamico di Modena begins with a very high amount of grape must, so it becomes impressively thick, rich and aromatic, with complex flavor, aroma, color, and sweetness. Use it as a finishing condiment, drizzled over everything from salads and grilled meats to cheeses, custards (think traditional Italian panna cotta, and fresh fruit.

Vinegar of this caliber is sold elsewhere for upwards of $20 a bottle. Honestly, we think this Platinum label offering is significantly better tasting than any of the $20 versions we've tried.
