This is a carefully crafted salami made exclusively for Trader Joe's by a Central California company that specializes in Italian-style cured meats. They begin with select cuts of pork and a traditional blend of seasonings. The salumiere then adds Black Summer Truffles from the Umbria region of central Italy to the mix. At this stage, as tradition dictates, the meat is stuffed into casings and hung to air dry, in temperature-controlled rooms specially designed to maximize flavor, for 3-4 weeks. Over that time, the salami loses about 40% of its original weight, and while the truffles make up only .5% of the total weight of the original blend, the aging process allows the truffle flavor to permeate the sausage, lending a distinct aroma and earthy flavor.
Slice Trader Joe's Truffle Salami on the bias and serve with Unexpected Cheddar, Manchego, or gild the truffle and serve it with a schmear of our French Truffle Chevre.
