Trader Joe's Butternut Squash & Creamed Spinach Gratin took its inspiration from a recipe that enthralled our imaginations and titillated our taste buds. It also took two hours to prepare, with active work time of about an hour and fifteen minutes. We'll admit that the results made it worth the effort; we'll also admit we almost never have even close to that much time to commit to a single dish. And so we set about creating a version to sell in our stores, a version that goes from fridge to table (via microwave) in just a few minutes—you can also heat it "the long way" in a conventional oven for about 15-20 minutes.
This is a lasagna-like, layered dish, but in lieu of pasta, we've used layers of thinly sliced butternut squash. The squash is paired with creamed spinach and generous amounts of Parmesan cheese.
