You could say that without Trader Joe's Pumpkin Bread and Muffin Mix, there would be no Pumpkin Season at Trader Joe's. This was one of the original members of the pumpkin posse, and it's no pumpkin poseur. Rather, it's a simple, straightforward baking mix, made with real pumpkin, that delivers excellent results with very little effort. It's a perennial favorite; we know people who buy cases of it when it arrives each fall, hoping to make it last until the following autumn, when it makes its annual return. (We've yet to meet anyone who's actually been able to make it last that long.)
The mix, combined with eggs, oil, and water, makes a generous loaf of moist and fluffy, lightly spiced pumpkin bread or a dozen standard-sized muffins. One of our favorite things about homemade pumpkin bread is the way the subtle flavor of the pumpkin is perfectly complemented by the zesty additions of cinnamon and nutmeg. Our mix has all these things, and we've done the majority of the mixing and measuring for you. If you find yourself feeling adventurous, add chopped nuts; dried fruit like raisins, cranberries, or apples; or shredded carrots or zucchini for an extra splash of color and texture—or go all out and add all of these things to make a Fall Harvest Loaf unique to your kitchen. Kids we know—and kids at heart—really love it mixed with chocolate chips. Kids are smart.
