Just a few short years ago, "cookie butter" didn’t really mean anything.  On their own, the words had meaning, but together, not so much.  These days, say "cookie butter", and you're likely to be met with a smile, a hug, or maybe a playfully chastising "Oh, I cannot stop eating that stuff!"  What started as a simple spread of cookie-flavored goodness has grown to an assortment of three different varieties, each with its own point of view. 

Not yet on the Trader Joe's Cookie Butter bandwagon?  May we do our best to convince you to join the party?  Cookie Butter is, in the most simplistic terms, spreadable Speculoos cookies.  Speculoos cookies are classic Belgian cookies with great crunch, and a slightly caramelized, almost-but-not-quite-gingerbread flavor.   After the cookies are baked to a fabulous finish, they're crushed and mixed with vegetable oils and turned into a spread. It resembles peanut butter in color and spreadability.  The original Speculoos Cookie Butter is supremely smooth; Crunchy Cookie Butter is slightly crunchy, yet still supremely spreadable - kind of like the difference between creamy and crunchy peanut butter.  And the newest member of the Cookie Butter band is Speculoos Cookie & Cocoa Swirl - a swirled creation that's 50% cookie butter, 50% cocoa spread, and 100% craveable! Spread it on toast, bagels, pancakes or waffles.  Use it as a dip for pretzels, Speculoos Cookies, or apple slices. Melt a bit in the microwave and pour it over ice cream.  Or keep it really simple and just use it as a dip for a spoon.
