Also known as "ghee", clarified butter is made by slowly melting butter, allowing the water to evaporate and separating the milk solids from the rich, golden liquid that rises to the top.  What remains is pure butterfat, and is excellent for cooking. Being able to pick up a jar of Trader Joe's Clarified Butter from our grocery shelves means that you can enjoy Clarified Butter in your cooking without having to actually clarify the butter yourself - a considerable time savings.  We're so glad to have clarified that.  Aren't you?

Trader Joe’s Clarified Butter (ghee) is made with Grade AA butter made from the milk of cows not treated with rBST - every eight ounce jar starts out as 10 ounces of butter.  Because the solids have been removed, Clarified Butter has a much higher smoke point than regular butter (485ºF vs. 350ºF+-), and it doesn't separate when heated, making it ideal for pan frying everything from vegetables to shrimp.  You can use it in baked goods in place of ordinary butter to extend the shelf life of your cakes and pastries. It's very common in Indian cuisine, where it is primarily used as a cooking oil, as a dipping sauce for warm bread, and as a lamp oil in religious ceremonies.
