Porcini Mushroom & Truffle Triangoli

What's a "triangoli"?  Technically speaking, it's not a single thing - it’s many things.  Many triangles, to be precise.  And why are we selling triangles at Trader Joe's?  Because they're pillow-y triangles of pasta filled with savory goodness!

Trader Giotto's Porcini Mushroom & Truffle Triangoli, made exclusively for us in Italy, are triangle-shaped ravioli filled with an earthy, woody, delicious combination of sautéed and dried porcini mushrooms, shaved black truffles, toasted breadcrumbs and a touch of fresh ricotta cheese.  The egg pasta is thin and delicate, the ideal vehicle for the robust flavors within.  They cook quickly - about 3-4 minutes in gently boiling water - and are so flavorful they're best served without a heavy sauce.  We like them tossed in just a bit of extra virgin olive oil, topped with a sprinkling of Shredded Parmesan.  Add a simple salad, and dinner is served!
