At five years of age, human beings are impulsive, prone to tantrums, and generally immature.  When cheese reaches the age of five, on the other hand, it's about as mature as you'd want it to get.  When that five year old cheese is Cheddar from a world-class Vermont cheese cooperative, we think it showcases everything good that cheese has to offer.  We like this cheese so much we've even put a "bow" on it (see label).

Trader Joe's Five Year Aged Cheddar Cheese is handmade in Vermont, using raw milk from cows raised on small, family farms and not treated with rBST. As the cheese ages, it develops a rich, deep flavor that's more complex than you'll find in younger cheeses, yet it maintains the creamy finish you expect from a quality cheddar.  You can expect a sharp "bite", some crystallization, and a slightly crumbly texture.  Because it's from Trader Joe's, you can also expect a terrific price -- we're selling it for $9.99 a pound, where other cheese mongers would typically offer this type of cheese for significantly more.
