Especially for Pumpkin Season, we made the decision to add pumpkin to our frozen croissants.  Trader Joe's Pumpkin Croissants perhaps epitomize what makes Pumpkin Season so special to us -- we thought our existing croissants were perfect in every way, yet when we added the pumpkin, we realized that only then did they achieve perfection.  We think you'll agree.

Like the other croissants in our freezers, these are super-simple.  Just remove from the package, place on a baking sheet and thaw overnight -- they'll rise as they thaw; for the uninitiated, this is "proofing" -- then bake in your oven for about 20 minutes.  The dough is buttery and bakes to a crispy-on-the-outside, flaky-chewy on the inside finish.  They're filled with a rich, creamy, custard-like pumpkin filling and topped with pumpkin seeds -- we call this a double-pump(kin).

We'll only have Pumpkin Croissants around for the duration of Pumpkin Season; so if you're intrigued, check out our freezer case soon.  At $3.99 for each box of four -- a magnifique value -- they'll be in high demand, and when they're gone, they won't return until Pumpkin Season does.
