Trader Joe's Vegetable and Soba Noodle Stir Fry Kit, plated and topped with shrimp

Soba noodles (made from buckwheat) are often celebrated in soups—but stir-frying them is another yummy option. Trader Joe’s Vegetable and Soba Noodle Stir Fry Kit contains all the necessary ingredients to make a hot & savory (not to mention, quick, easy, and tasty) Japanese-style noodle dish!

The Kit uses Nagano Soba, made from a combination of buckwheat flour and regular wheat flour. They’re long & thin and taupe-colored, dappled with buckwheat flour flecks. The first step is to soften the Soba Noodles by soaking them in a bowl of hot water for 2 minutes before draining them and setting them aside.

Next, sauté the washed & chopped Vegetables (broccoli florets, bok choy, savoy cabbage, snow peas, green onion) with a tablespoon of oil in a medium-high heat skillet or wok. After 3-4 minutes, add the noodles and sauté for an additional 1-2 minutes. Finally, add the soy ginger sauce and toss to coat.

Prepared as directed, the Vegetables will be crunchy, the Soba will be blissfully chewy—both enhanced by the sweet sauce with its classic ginger, garlic and sesame flavors. In less than 10 minutes, you’ll have a complete, plant-based meal! Of course, you can always add protein by searing some Trader Joe’s Choice Angus Beef Sirloin Steak Tips, or chopping up some of our pre-cooked Chicken Strips. Any of our frozen shrimp options would also pair nicely with this Stir Fry.
