The mac and cheese Jefferson served at his state dinner in 1802 was certainly missing of any sort of vegetable. Nevertheless, we decided to add some al dente cauliflower and tender kale to this new mac-and-cheese manifestation. The two vegetables partner well with creamy, extra-sharp, Vermont cheddar cheese, and soft, tiny-tube-shaped Ditalini pasta.
Vegetable stock, with a host of organic herbs, enriches the flavor, while butter and Parmesan cheese enrich… well… the richness! It all adds up to a delectable mac-and-cheese dish with 15 grams of protein and 30% of your daily calcium in every eight-ounce serving.
