Wasabi Pasta Salad
A cold asian noodle salad made with brown rice spaghetti, colorful vegetables and a simple dressing. Make it ahead and it let chill while the flavors meld. It's an easy side dish, or make it a main by adding tofu or chicken.
1/2 package TJ's Brown Rice Spaghetti, cooked
1/2 cup TJ's Shelled Edamame (in our refrigerated cases)
1/2 cup TJ's Shredded Carrots
1 medium TJ's Cucumber, peeled and chopped
2 TJ's Green Onions, diced
3 tablespoons TJ's Seasoned Rice Vinegar
1 tablespoon TJ's Wasabi Mayo
1/4 teaspoon Sea Salt, or to taste
Rinse cooked spaghetti with cool water and then toss with rice vinegar and wasabi mayo. Mix in edamame, carrots, cucumber and green onions. Serve chilled.
