Preheat oven to 400°F. Add hazelnuts to a sauté pan over medium heat and gently stir until toasted and fragrant, about 3 or 4 minutes. Place hazelnuts on a wide, flat dish to cool. Slice Cheese into 8 squares and place on a non-stick pan or a parchment lined baking sheet.
Sprinkle hazelnuts over cheese squares. Bake on the center rack of oven until edges turn golden and center is bubbly, about 6 or 7 minutes. Gently remove Frico discs and set aside on paper towels to cool. Warm soup according to package directions and place into 8 cups. Float one Frico over each cup of soup. Garnish with a sprig of fresh thyme.
Makes 8 servings as a starter.
