Dissolve the saffron in 2 teaspoons of hot water. Process the date, pistachio, and dissolved saffron in a food processor for one minute until it forms a paste. Roll the paste into twenty small balls.
Assemble 10 wooden skewers as follows: 1 apple chunk, one date-pistachio ball, 1 cantaloupe cube. Repeat. Drizzle caramel sauce over each stick. Serve cold.
