Summer Grilled Peach Salad

Cut the peaches in half and pit them. Cut the halves into wide wedges, and then toss the peaches with olive oil. Place the peaches directly on the grill and cook over a medium fire (on all sides) until grill marks form and peaches are tender but not falling apart; about five minutes. Remove from the grill and set aside. In a bowl, toss the lettuce with 6 tablespoons of vinaigrette and pepper, to taste. Divide the lettuce among four plates. Add the peaches, shallots and bacon to the same bowl and toss with the remaining two tablespoons of vinaigrette. Divide the peach mixture and place atop each plate of lettuce. Then divide the goat cheese by four and crumble over each plate. Add pepper and salt to taste.
