Mango Melba Shortcake

  • 1 jar TJ's Raspberry Jam
  • 1 bag TJ's Frozen Mango Chunks, fully thawed
  • 1 package TJ's Buttermilk Biscuits, baked and cooled
  • TJ's French Vanilla Ice Cream

In a small sauce pan, over low heat, heat the jam until syrupy. Mix the mango chunks into the syrup. Split the biscuits in half and fill with the mango mixture. Top with a ice cream or whipped cream. (If Dame Nellie Melba had known about mangos, she would have asked Chef Escoffier to make the dessert with this luscious tropical fruit instead of peaches... well, at least we thinks so!)

Serves: 8
Cooking Time: 25 - 35 Minutes
