  • 3 Links TJ’s Fully Cooked Sun-Dried Tomato Chicken Sausage, sliced
  • 1 packet TJ’s Organic Frozen Brown Rice, heated
  • 1 can TJ’s Organic Black Beans, drained
  • 1 Tbsp TJ’s Tomato Paste or TJ’s Marinara
  • 1 Tbsp Water
  • 2 Handfuls TJ’s Baby Spinach
  • 3-4 TJ’s Eggs, Fried
  • TJ's Butter or TJ's Canola Oil Spray for frying eggs
  • 1 TJ’s Avocado, diced
  • 2 squirts TJ’s Sriracha Sauce
  • TJ’s Salt & TJ’s Pepper to taste

In a medium frying pan on medium heat, combine sausage, rice, black beans, tomato sauce, water and spinach. Stir 2-3 minutes until heated. Taste and add seasoning as desired. Divide portions into serving bowls and top with a fried egg, avocado and a squirt of Sriracha.

Serves: 3 - 4
Cooking Time: 12 - 18 Minutes
