Apricot Chicken

  • 2 Tbsp TJ's Salted Butter
  • 2 TJ's Organic Chicken Breasts
  • 1/3 cup TJ's Unsulfured Turkish Apricots, quartered
  • 3 Tbsp TJ’s Organic Reduced Sugar Apricot Preserves
  • 1/4 tsp TJ’s Sea Salt
  • 3 stalks TJ's Chives (garnish)

Cut chicken into bite size pieces. Melt butter in a skillet. Add chicken to skillet and cook over medium heat for approximately 5-7 minutes or until no longer pink. Add apricots, preserves and salt. Cook for an additional 2-3 minutes until dried apricots start to soften. Serve over rice.
