  • 2 tablespoons TJ’s Extra Virgin Olive Oil
  • 1/4 cup TJ’s Yellow Onion, minced
  • 1 clove TJ’s Garlic, minced
  • 1/2 cup TJ’s Roasted Corn
  • 5 cups TJ's Organic Low Sodium Chicken Broth
  • 1 cup TJ's Organic Whole Brined Chicken leftovers
  • 1 can TJ's Organic Great Northern Beans, drained
  • 1 can TJ's Hatch Green Chiles
  • 1 tablespoon TJ's Spices of the World, Cumin
  • 2 teaspoons TJ's Black Pepper
  • Pinch of TJ's Crushed Red Chile Pepper
  • 1 tablespoon TJ's Cornstarch
  • 3 tablespoons Water
  • Cilantro, chopped

Sauté onions and garlic in olive oil for approximately 3 minutes. Add frozen corn and sauté an additional 3 minutes. In a stockpot, combine onions, garlic, corn, chicken broth, chicken, beans, chiles, cumin, black pepper and red pepper. Cook over medium heat for approximately 20 minutes. Reduce heat to low. Mix cornstarch with water. Slowly add cornstarch mixture to chili stirring constantly. Cook for an additional 2 minutes as chili thickens. Top with chopped cilantro and serve.

Serves: 4 - 6
Cooking Time: 35 - 40 Minutes
