Made from cow's milk collected on local farms, not more than 12 miles from the creamery in Lancashire, each cheese is crafted by hand according to traditional methods, and carefully aged for varying periods to achieve their signature styles. Then the cheeses are layered, one on top of another. The effect is dramatic, with hues ranging from almost white to rich orange. And the mingling of tastes is tantalizing, with subtle differences between each layer. The overall experience is mellow, creamy and slightly tangy.
