Whenever we enjoy Butter Lettuce, we can’t help but think of the words of C.D. Warner: “Lettuce is like conversation: It must be fresh and crisp, and so sparkling that you scarcely notice the bitter in it.”
Butter Lettuce, indeed, sparkles. Named after a luscious dairy spread, the leaves are notoriously smooth, soft and fragrantly sweet. Their tender crunch and mellow, “buttery” bite allows them countless culinary pairings. They make a beautiful salad bed – delicious with cherry tomatoes, avocados, Gorgonzola and our Pear Champagne Vinaigrette or shaved Parmesan, Artichoke Hearts and our Raspberry Vinaigrette. They also layer nicely in sandwiches. And, because of their natural cup-like contour, they function wonderfully for carrying fillings like Wine Country Chicken Salad or Kimchi Fried Rice and pieces of Beef Bool Kogi. You can even serve them warm – wilted with a splash of white wine – or add them to soups. Seriously. Culinary Curiosity: Butter lettuce contains lactucarium, which has sedative properties. According to lore, it was served in Roman high courts as a first course by emperors who wished to test their subjects by challenging them to stay awake for the entire meal!
