Having forgotten the batch he was cooking on the stove, he flaunted his failed dumplings burnt-side-up before the Imperial Court, proudly touting his new recipe. He lived. And like dumplings to a pan, the idea stuck.

Each Potsticker starts with chunky pieces of shrimp and crab meat, generously seasoned with our favorite Sriracha sauce. This spicy mixture is combined with mung bean (aka “glass”) noodles and crunchy water chestnuts to provide some additional texture. Cilantro, mustard powder, and white pepper round out the flavorful filling, which is then carefully swaddled in a delicate, orange-hued wrapper made with wheat flour and colorized with carrot juice and red chili flakes.
