Blanched Almond Flour
Baker Josef’s Blanched Almond Flour begins with California almonds that are blanched to remove their skins. They’re milled to an extra fine grind, giving the flour a light, delicate texture. It comes by its light color naturally – there are no bleaches or whiteners of any kind – the only ingredient is blanched almonds.
How do you use Almond Flour? It can be substituted for traditional flours, though you may need to tinker with the amount of sugar in your recipes, and add in egg whites to help things stick together. We’ve found that because almonds are naturally sweet and higher in fat, we’ve been able to reduce the sugar and butter/oil in recipes by about 25%. But it’s not just for baked goods. You can use it as a substitute for breadcrumbs in meatballs or breaded chicken. You can even add it to a smoothie for a boost of “good fat” and protein.
