Black Rice

Black Rice is an aromatic variety grown in Thailand.  Like brown rice, Black Rice is a bit nutty and has a pleasant chewiness.  Like brown rice, it's a whole grain rice, and gets its rich color from its intact outer bran layer. Unlike brown rice, Black Rice takes only about 30 minutes to cook. It's also rich in B vitamins and boasts about eight times the anthocyanins (powerful antioxidant compounds) as brown rice. 

Cook Black Rice as you would any raw rice - with water, broth, wine, or a blend of all three.  The color will bleed a bit, cooking to a vibrant purple hue (which explains why it's sometimes called "purple rice", as well) that presents with panache on your plate.  Its creamy finish makes it a natural for risotto dishes.  And its subtle sweetness means it's supremely suitable for desserts like rice pudding, too.
