Greek Yogurt Lemon Poppy Seed Muffins

Lemon & poppy seeds are common partners in baked goods, and we're quite fond of this combination, highlighting the tart lemon and the slightly nutty flavor and subtle crunch of the seeds. However, we haven't tasted these two flavors like this before. That's because this uses Greek yogurt in the recipe, which makes the muffins more moist, more tangy, and adds protein, too!
Trader Joe's Greek Yogurt Lemon Poppy Seed Muffins (we're all about the descriptive names around here) are a little sweet, with good lemon flavor and just the right amount of poppy seeds. They're dense muffins (you could definitely frost them and pass them off as cupcakes, if you were so inclined) that taste terrific slathered with butter and jam for breakfast, and partner perfectly with a cup of tea for a civilized, mid-afternoon nosh. You can heat them in a conventional or toaster oven to intensify the flavors, or enjoy them at room temperature, just out of the package.
