If you saw someone else enjoying Trader Joe's Pesto Gouda, you might find yourself green with envy. Once you get your hands on a piece for yourself, though, you're more likely to feel like the grass is greener where you're standing. We first introduced this green cheese as a Spotlight Cheese in March, in honor of St. Patrick's Day -- not that Italian-inspired pesto and Dutch Gouda are representative of Ireland, but the cheese is green. Response was so overwhelmingly positive that we went back to the cheese maker and gave them the green light to make more of this verdant cheese.
Trader Joe's Pesto Gouda is crafted for us in the Netherlands using organic milk and fresh, organic basil and garlic. It's soft, herby, and incredibly fresh tasting. Paired on a cheese tray with our Murcia al Vino, its green hue meets with the Murcia's red rind to create the perfect Christmas cheese pairing. Its uses reach beyond the cheese course, though. Shred it over salads or blend it into pasta with your favorite sauce. It makes a smashingly good grilled cheese, and adds an entirely unique profile to a quesadilla or pizza.
