This is Not Your Mother's Meatloaf
Well, in a sense, it is someone's mother’s meatloaf. But probably not yours. Years back, someone's mother had an inspiration that would help her stretch her family's resources. She would put individual portions of meatloaf into muffin tins, ensuring that everyone at the table got a "muffin" — it turned out this was not only an inspired way to feed a big group, it was a fun way to play with your food in a socially acceptable manner.
Trader Joe's Fully Cooked Turkey "Meatloaf Muffins" have taken that mother's inspiration and made a meal out of it. Our meatloaf, made with well-seasoned ground turkey, is layered with sautéed chopped spinach and Parmesan mashed potatoes. Each "muffin" is not only an architectural accomplishment, but a culinary one as well. These are excellent for family dinners — just like mom used to make. We think they're good enough to serve to company, too — a mention of their history is sure to be an excellent suppertime conversation starter.
