We can't be sure why Mr. Clemens was so certain that cauliflower was well educated. Perhaps it's because its very name involves Latin linguistics. Yes, cauliflower is an Anglicization of two Latin words (caulis, meaning stalk, and floris, meaning flower), and is indeed a member of the cabbage family. Unlike its leafy cousin, though, cauliflower is known for its creamy white color and mild flavor. This cruciferous veggie has been cultivated for centuries, originating in the Mediterranean region - perhaps on the island of Cyprus.
Trader Joe's Cauliflower Florets are just that, Cauliflower Florets. The stems and leaves have been cut away, leaving you with just the parts you want to enjoy. They can be eaten raw, of course, and served with any number of dips or salsas. They're easy to bake, steam or sauté. Many folks like their Cauliflower mashed, like potatoes, with copious amounts of butter. We won't argue with that. One of our favorite ways to eat Cauliflower, though, is roasted. Simply toss the florets in olive oil, spread them on a rimmed baking sheet or in a casserole dish, and sprinkle with salt and pepper. Roast in a 450º oven for about 10 minutes, then turn and roast for an additional five to ten minutes until they're cooked to your liking. Top with a bit of Shredded Parmesan and you'll have a veggie side dish that's sure to please.
